     Healthy New Orleans Cuisine is a great new cookbook which has been published by Mark Gasquet, a chef with over 50 years of cooking experience. He loves New Orleans food but has to adapt the recipes to meet the needs of those who want to reduce fat, salt, carbs, and unhealthy ingredients without losing the wonderful flavors of our cuisine.
    Who would know more about healthy food preparation than a diabetic chef?
    Chef Mark is diabetic and this project which has been in the oven for about 5 years has been evaluated by a Registered Dietitian, a nutritional analysis computer program, and in accordance with the guidelines of the American Diabetic Association.
    For several years he's taught culinary skills at Delgado Community College and for Jefferson Parish Recreation Department, and conducted private classes in homes. His professional training in this field was courtesy of Uncle Sam in 1954 when he was a Private E-2 and has continued over the decades attending classes at Le Cordon Bleu in Paris and London, the Ritz in Paris, and the C.I.A. in California. He's often enjoyed Mardi Gras by doing a demo on true New Orleans cuisine for the chefs in training and friends at The French Culinary Institute in NYC.
